Still made with delicious fresh walnuts, we have added low carb but acidic blueberries and a homemade dressing. Note: This is made with keto-friendly walnuts and blueberries that are low in carbs but carbs add up quickly on the ketogenic diet, so we recommend eating this salad on a day when there are no other "keto treats" and you are only eating meats and vegetables (but other good fats are not a problem).

HOT MEAL - Hearty Chicken Soup
A favorite that our customers ask for again and again. While low carb, it is fragrant, hearty and completely delicious! We make it with "triple chicken stock". Firstly, when we poach our chicken, we save the broth from our organic chicken and make this soup freshly immediately after cooking our chicken. Next, we use the bones from pastured chickens to extract all the goodness and flavor from that and then take out all the solids, leaving delicious bone broth Now, we make your soup cooking all the vegetables and fresh organic chicken in our incredibly flavorful broth. This complete healthy meal in a bowl is both delicious and incredibly healthy.

It is a nice chicken salad topped with soft goat cheese that we roll into delicious balls that are surrounded by almond pieces. This comes with a home-made dressing on the side.

This simple chicken salad is made much more zesty with the addition of pesto on our chicken and fresh locally grown organic basil in our homemade dressing. The basil in the pesto is imported from Italy (Liguria) for the most authentic taste. Liguria is known in Italy for the best pesto!

HOT MEAL - Nicoise Stuffed Vegetables
These delicious vegetables are stuffed with delicately seasoned grass-fed beef (unless something else is written on the menu). They are native to Nice in the south of France and various vegetables are used and gently flavored with fresh herbs, including thyme which is so typical of the south of France. Typically, you get two stuffed vegetables per person. We use the freshest vegetables of the season which are typically zucchini, tomatoes, patty cake (round) squash or small eggplants. This can include cheese, or not, for a non-dairy option.

BIG SALAD - Broccoli or Napa Cabbage and Bacon Salad
This salad is crunchy but not too firm and quite delicious. Napa cabbage can best be described as something between lettuce and white cabbage and make a terrific base for a salad. The dressing has soaked into the salad softening it just enough to make it tasty. The protein is mostly bacon and sharp aged cheddar and there is a small amount of cheddar to add a bit more protein. This is one of our more popular salads.

HOT MEAL - Zucchini Spaghetti Bolognese
We made our rich thick garlicy Bolognese sauce from scratch with 100% grass fed beef and many vegetables and present it with our freshly cut zucchini spaghetti. This is a Class Favorite and suitable for kids and other picky eaters. Please note: We have substituted a photo with regular spaghetti but will change it for a much more colorful and authentic version soon. (Zucchini is definitely more colorful than regular pasta!)
